Chargrilling is using a form of fuel (usually charcoal) to power grills which will cook food at very high temperature. The food most commonly cooked on these tend to be meats and seafood. These are mainly used outside, as they’ll start to smoke after a while. And are a very common occurrence in hot weather, especially in the summer. In the food industry, they are sometimes known as charbroilers. They are frequently used in steakhouses, diners and catering businesses, to create a smokehouse food style.
They must be cleaned thoroughly after each use and must be maintained! It can be dangerous if grease and fat is left on it from previous food items.
Gas chargrill tend to be a better choice for commercial kitchens. A downside of gas chargrills is that they use a lot of fuel to power and cook food. A plus point is that they are extremely powerful to use! As an alternative, electric chargrills are also available and use less power. But aren’t as powerful as gas chargrills.
