Dough Proofer Services | NWCE

Dough proofer services, repairs & installations

A dough proofer is used in bakeries, prior to the final baking to improve the fermentation process. This can affect the quality of the final product, from the size of the final product to the texture of it. With the use of the control hub, we can ensure that you baked goods are being made to the highest quality available. We can provide you with the most appropriate kitchen equipment for your kitchen, and help you install any commercial kitchen appliances to the highest quality.

Essentially, a dough proofer is a warming chamber which improves the rate of fermentation, both the speed it’s made at and the quality too. These boiling hot temperatures increase the activity of the yeast, resulting in an increase in carbon dioxide production and at a higher rise rate. A dough proofer is a large see through cabinet, with multiple shelves to heat bakery products. They each have a control hub to control the temperature. Most models bake goods at temperatures of around 21C – 49C, to make sure the dough rises thoroughly. Proofing happens when yeast produces bubbles to feed on the sugar and then emits carbon dioxide. The bubbles of carbon dioxide then cause the dough to proof, which is were it grows in size (oftenly doubles.)
