Essentially, a dough prover is a warming chamber which improves the rate of fermentation, both the speed it’s made at and the quality too. These boiling hot temperatures increase the activity of the yeast, resulting in an increase in carbon dioxide production and at a higher rise rate. A dough prover is a large see through cabinet, with multiple shelves to heat bakery products. They each have a control hub to control the temperature. Most models bake goods at temperatures of around 21C – 49C, to make sure the dough rises thoroughly. Proving happens when yeast produces bubbles to feed on the sugar and then emits carbon dioxide. The bubbles of carbon dioxide then cause the dough to proof, which is were it grows in size (often doubles.)
